Dummy Kitchen - Cheesy Spinach Egg Muffins
I'm terrible at cooking.
I don't enjoy grocery shopping, I find cooking to be a nuisance from start to finish, I hate doing dishes, and I never feel confident that my chicken is done enough. My good is always either bland or over-seasoned and I've got a notorious habit of injuring myself in the kitchen. I could go on forever about my many culinary fails, but I'll refrain. As much as I'd love to Postmates every meal, I know the smarter, healthier, and more-budget friendly option is to roll up my sleeves and attempt to cook something.
Every once in a blue moon, I get it right. I have managed to produce meals that were actually edible, dare I even say tasty! Lately, I've been on a hot streak where I tried 3 new recipes and was able to nail all of them! What I look for in a recipe is 3 things: minimal ingredients (I'm talking 5 or less), short prep times, and low effort (if you tell me to use an electric mixer, I will leave). The first one I'll share with you guys is an easy breakfast recipe.
Cheesy Spinach Egg Muffins
This morning for brunch, I made these cute little egg muffins. The most impressive part of this was that I did not work from a recipe and did absolutely no measuring; that's how simple it is to make egg muffins. I already had baby spinach and shredded mozzarella in my fridge so I just beat 6 eggs with a fork, mixed in a handful of green and a handful of cheese and poured my mixture into a muffin tin. After plopping them into the oven and hoping for he best, I was impressed with the end result resembling actual food and enjoying the taste of my creation!
An idiot can make these, and they're totally customizable. I plan to make these again and try experimenting with additional ingredients like mushrooms, tomatos, and maybe some ground turkey. I also love that I can refrigerate the rest for a grab and go breakfast the next day! Here's how you can make your own:
INGREDIENTS:
6 eggs
~1 cup shredded cheese
~1 cup spinach (fresh or frozen)
INSTRUCTIONS
crack six eggs into a bowl, beat with whisk
mix in additional ingredients
spray muffin tin, then pour egg mixture evenly into each slot
Bake at 375° for 15 minutes
