Dummy Kitchen: Green Bowls

My roommate and I have been eating “keto” the past two weeks (I put that in quotes bc while she’s been keto, I’ve been Cheeto, as in cheating several times). So with that in mind, I’ve been trying to behave and make meals that don’t stray too far from the protein-heavy, carb-restricted diet plan. 

I made this simple bowl out of ingredients I already had at home, and I nicknamed it The Green Bowl for obvious reasons.  

Ingredients

  • Any leafy greens (lettuce, arugula, spinach) 

  • 1/2 cup shredded rotisserie chicken

  • 1/2 avocado

  • salt & pepper

  • balsamic vinegar (optional) 

Instructions

  1. lay a bed of greens in your bowl/plate as a base

  2. in a bowl, mix chicken and avocado until avocado is mashed and chicken is covered.  

  3. Scoop avo-chicken mixture on top of greens

  4. season to taste with salt and pepper

  5. Add a dash of balsamic to flavor the greens

  6. enjoy! 

I love a simple meal that requires minimal effort which is why I went with rotisserie chicken. But you could of course prepare your own chicken however if you’re not a total lazy girl like me. This meal is filling and the perfect satisfying lunch!
